That food truck in Asheville got me thinking about our plating

Last week I took a day off and hit up this taco truck near the river, nothing fancy, just a guy and his griddle. He plated everything on these plain metal trays, no sauce art, no tweezers. But the way he layered the salsa and onions, it looked incredible, and honestly tasted better than half the spots I've worked. Made me wonder if we overthink the fine dining side of things. Has anyone else had a moment like that where a street spot reminded them to strip it back in the kitchen?

Think about the texture contrast on those metal trays. A fine dining plate gets wiped clean so you can drag a spoon through the puree, but street food lets everything mix together. The salsa soaks into the tortilla, the onions stay crunchy on top, and the heat from the meat melts the cheese at the bottom. We spend all this time making sure nothing touches, but maybe some of the best bites are the ones where flavors collide by accident. That taco truck probably didn't plan it, but every bite had a different ratio of stuff. That's what I've started stealing for my own plating, just letting things fall where they naturally want to go.
