Switched from counting tickets on paper to a simple clipboard tally and my Friday nights got way better
I run the line at a 60 seat spot in Portland and for over a year I tracked every order on a scrap paper pad stuck to the pass. Tickets got greasy, pages blew off when the back door opened, and I kept losing count during a rush. A cook from the morning crew handed me a clipboard with a plain grid sheet and a marker, one box per dish, and I figured it was too simple to matter. First Friday with it we cleared 140 covers and I didn't have a single missed fire or double order. The paper pad had me flipping pages and guessing, but the clipboard let me see the whole night at a glance. My expo said the rail felt calmer and she was right. Anybody else ditch a system that looked fancy for something dead simple?
