Still kicking myself for doubting the instant-read thermometer
I always thought they were a gimmick for home cooks but after ruining a $60 ribeye last week I finally caved and bought one. That thing saved my dinner service tonight... has anyone else been converted this late in the game?

Yeah, I was late to the party too. Always thought it was just another gadget taking up drawer space. Now I don't trust myself to cook meat without one.

For me it was steak... I kept burning it on the outside and it'd be cold raw in the middle. Got one of those cheap probe thermometers and it changed everything. Now I just set it for medium rare and walk away, no more guessing.
