Spent $40 on a proper fish spatula and now I get why everyone raves about them
Used the same flimsy turner for 6 years in my line at the diner in Portland, figured a fish spatula was a gimmick until I grabbed one from the restaurant supply. It flipped a delicate cod fillet without breaking it apart, something I'd been patching with extra butter and prayers daily.
