Sous vide machine sat unused for a year, now it runs every shift
Bought a sous vide circulator on a whim in March for $89 and it lived in a drawer until last Tuesday. I do the prep for a 40-seat bistro in Portland, and we had a salmon special that kept coming out dry on the grill. Threw four portions in the water bath at 125 for 45 minutes then seared them hard. My line cook said it was the best fish we've served in six months. Now I'm testing it on eggs and pork belly this week. Anyone else have a gadget they ignored for way too long before it became your go-to?
