Showerthought: I had to choose between a 3-day sous vide short rib special or a quick seared scallop dish for our Valentine's menu.

I went with the scallops to keep ticket times down, but now I'm wondering if I missed a chance to really showcase a technique, has anyone else faced a similar call between a showstopper and a workhorse dish?

That's a tough call, but I get why you went with the scallops. A slammed service with long ticket times can ruin the night for everyone. The short rib sounds amazing, but you probably saved yourself a major headache.
