Serious question, does anyone else think the 3 second rule for dropped steak is nonsense
I was working the grill station at a country club in Scottsdale about 4 months ago and watched a cook pick a ribeye off the floor, rinse it under the tap, and throw it right back on. I told him that was a health code problem and he laughed and said the heat kills anything on the surface anyway. I looked it up that night and the studies say bacteria sticks to food the second it hits the floor, wet or dry, no timer needed. I get that food cost is brutal and nobody wants to toss a $28 steak, but has anyone here actually gotten sick or failed an inspection over this, or am I being too uptight about it?
