My old sous chef told me to never salt mushrooms until they're done searing

I argued with him for a year, but after my batch yesterday came out watery, I finally tried it his way. Has anyone else had a piece of kitchen advice they fought against that turned out to be right?

My stubbornness has ruined more mushrooms than I care to admit.

My first time trying to grow shiitakes, I lost almost the whole batch by being too careful and not letting them dry out enough. Sometimes what feels like giving up is actually just working with the mushroom's natural process instead of fighting it. I've had better luck since I learned to step back and watch for what they need, even if it goes against my gut feeling. A little flexibility saves a lot of good food.
