Just realized my line cook's weird trick for scrambled eggs is actually genius
Honestly, I was working the brunch shift at The Morning Star Cafe last week and my new guy, Leo, was making scrambled eggs. He told me he adds a tiny splash of cold water right at the end, like maybe a teaspoon per three eggs, and swears it stops them from overcooking on the pass. I always thought that was a home cook thing, but ngl, the texture was perfect every single time. Anyone else have a weird little trick from their crew that actually works?

Remember that trick with a pinch of baking soda in onions to help them caramelize faster? My old grill cook showed me that. I thought it was nuts, but it totally works without making them taste weird, just gets them soft and sweet in half the time. Changed my whole burger game. What's the best weird tip you've actually kept using?
