Just hit 500 covers on a Tuesday night and the math doesn't add up

We ran the numbers after service and realized our 45-seat dining room turned over 11 times, which means we were moving faster than our planned 90-minute seatings. The kitchen line held but our dish pit completely crashed around 9 PM. How do you handle those surprise volume spikes without burning out the team?

Wow, 45 seats turning over 11 times? Did you guys accidentally give away free gold with the dessert course? Seriously though, that dish pit crash sounds brutal. How do you even plan for a Tuesday that acts like a Saturday night? I guess you just have to hope the whole team is in a good mood and willing to run on pure panic. Maybe the real answer is having a secret list of people you can call who will come in and just wash dishes for cash.
