Finally got my prep timing down after 3 months of chaos

Started tracking every station's mise en place with a stopwatch instead of guessing, and my Friday night tickets are coming out 15 minutes faster than before. The big change was doing the veg prep in the morning for the whole day, not just waiting until the rush. I mean, it sounds obvious now, but having that cost sheet with actual times made me see where I was wasting 20 minutes just on onions. Has anyone else tried timing their prep work like that, or am I overthinking it?

Timing everything down to the minute feels like it turns cooking into a math problem. Prep flow matters, sure, but you can hit those numbers and still miss the feel of the station on a busy night.
