Marketing works because people convince themselves they need the expensive version before they even try the cheap one. We've all been conditioned to think price equals quality in the kitchen.

Used to be all about buying the priciest knife set I could find, thinking it made me a better cook. Then I picked up a forty dollar chef's knife from a restaurant supply store and it worked just as good for every day chopping. Pretty much proved to me that a lot of that "quality" price tag is just marketing hype getting into your head.
