Dropped a whole hotel banquet salad station 10 minutes before service

I was working a wedding at the Hilton in Charlotte last summer and one of the new guys bumped into the reach-in right as I was pulling out 50 prepped salads. They went everywhere. I told the sous and we just grabbed every backup green in the walk-in and tossed them with whatever dressing we had on hand. The couple never noticed but my heart rate didn't come down for like an hour. Anyone else have a catering disaster that close to the wire?

Did you guys get written up for that? The walk in trick saved me once too when we dropped a whole cambro of sauce right before a rush... just grabbed whatever was close and nobody said a word.

Ngl @dakota_king80 I think you guys are overthinking this. Dropping a full cambro of sauce is bad but unless it ruined someone's uniform or got all over the expo tickets nobody really cares. The walk in trick just buys you a minute to breathe and figure out your next move. Honestly unless a manager saw it happen and decided to make an example out of you, it's not that deep.
