Pro tip: a line cook in Nashville tossed my pan in the dish pit and I stopped babying my cast iron
I was working a pop up at a bar off Broadway back in March and my 12 inch skillet got grabbed for a rush order of cornbread. This guy scrubbed it with steel wool, hit it with soap, dried it on the burner, and slid it back to me without a word. I almost lost it, but the next morning that pan cooked eggs better than it had in two months of me treating it like a museum piece. Now I use soap and a scrubber whenever it needs it and just do a quick stove top season after. Anyone else stop worshipping their seasoning and start actually cooking with the thing?
