Gave up my ceramic pan after 11 years, back to cast iron for eggs
I used a nonstick ceramic skillet for over a decade because I was scared of sticking eggs. Last month I dug out my grandmother's old #8 cast iron, stripped it with oven cleaner, and did 4 rounds of grapeseed oil seasoning. The first few eggs were a mess, but after that it got slick enough that a fried egg slides around like it's on ice. The ceramic pan started flaking in 2021 and I kept using it anyway, which was dumb. Now I just preheat low for 5 minutes and add a tiny knob of butter, zero problems. Anyone else made the switch back and found the learning curve worth it?
