Why do guys crown baseboard before scribing the floor?

I keep seeing guys run baseboard tight to the floor on old houses and then fight every hump and dip for an hour. Scribe it to the floor first, it takes ten minutes with a compass and saves you the caulk mess. What's your go-to method for wavy floors?
