Can we talk about using water-based polyurethane on kitchen cabinets

I tried a high-end water-based finish from a local woodworking supply shop in Portland on a set of maple cabinets for a client and got a weird milky haze that wouldn't buff out, so what did I do wrong with the application that caused this?

Classic moisture trap from applying it too thick, gotta do thin coats.
