Tried a new brand of boning knife and it cost me a whole pork shoulder

I saw a deal online for a set of three boning knives for $60 last month. The first one snapped at the handle while I was working on a 20-pound shoulder. The blade went into the meat and I had to throw the whole thing out. That was about $45 down the drain right there. Has anyone found a decent budget knife that actually holds up?

I read a butcher's blog where he said the handle-to-blade joint is the first thing to fail on cheap knives. That's exactly what @price.logan is getting at with the Victorinox, the plastic handle is molded right onto the tang so it can't snap off. I've seen guys use the same one for a decade in a shop.

That's a brutal way to find out a knife is junk. Honestly, the Victorinox Fibrox boning knife is the standard for a reason. It's not fancy, but the blade is flexible and the handle is solid. I've used mine for years on hundreds of pounds of meat without a single issue. You can find them for around thirty bucks, which is cheap for a tool you can trust.
