Switched from a 6-inch boning knife to a 9-inch breaking knife for primal breakdowns last year.

I used to think the smaller blade gave more control, but the longer one lets me follow seams in one clean motion and saves my wrist. Anyone else find a specific tool change that sped up your work?

That's a good point about the longer blade. But calling it a breaking knife for primal work is a bit off. A breaking knife is usually stiffer and meant for, well, breaking bone. What you're describing sounds more like a flexible boning knife or even a scimitar for following those seams. The right flexibility makes all the difference.
