Spent 4 hours trying to debone a pork shoulder wrong

Finally figured out I was going against the grain from the start. My knifework was fine but I was fighting the meat the whole time. Has anyone else spent way too long on a stupid simple cut?

I mean that's exactly the kind of thing that makes you wanna throw the whole roast out the window. Once you figure out the grain direction it's like night and day, but getting there is a real pain. Idk why but pork shoulder especially seems to have that weird cross-grain thing happening in different spots. Maybe it's just me but I've spent way too long on a similar cut where I was basically sawing instead of slicing. The meat just fights back the whole time and your hand cramps up like crazy. Feels like a total waste of a Saturday afternoon until you finally get that clean pull apart and realize you just needed to rotate the whole piece.

@logan_dixon18 nailed it. I'd sooner fight a bear than that pork shoulder again.
