Saw a butcher in Asheville break down a whole hog with nothing but a 6 inch boning knife
I was down in Asheville visiting my sister two weeks ago and stopped in at a small shop downtown just to look around. The guy behind the block was breaking down a 180 pound hog and the whole time he used one beat up 6 inch boning knife, no saw, no cleaver. I stood there for maybe 20 minutes watching him separate the shoulder and he never once switched tools. He told me he sharpens it twice a day and has used the same one for 11 years. I have three knives on my block at home and I still reach for the saw on ribs. Is there a real advantage to working with one knife like that or is it just a habit some guys get into?
Man walks in with one knife and walks out with a whole hog, meanwhile I've got a drawer full of tools and still manage to make a mess of a pork shoulder. I like to think I'm a pretty handy guy but this makes me feel like I've been doing it wrong for years. Pretty sure half my block is just there for decoration at this point. Guess the real trick is just being too stubborn to buy anything else for 11 years.
