Rant: That one customer who corrected my cut and made me rethink everything

I had this older guy come in to my shop in Columbus about 6 months ago. He watched me trim a ribeye and said I was leaving too much cap on the side, that I was costing him money. I got defensive at first, but he pulled out a worn photo of a perfect cut from like 1987 and showed me the difference. It was maybe a quarter inch difference but he said it changed the way the steak cooked at home. I ended up trying his method on the next batch and honestly it sold better. How do you handle a customer who seems to know more than you do?
