Just realized I was over-trimming my briskets for years

I hit 500 briskets trimmed last Saturday and decided to weigh the fat I'd saved from the last 50. Turns out I was tossing about 2 pounds of usable fat per brisket that could have gone into tallow or sausage. Anyone else ever track their trim waste and change their approach?

That bit about 2 pounds of usable fat per brisket really hit me. I started keeping all my fat scraps separate after a buddy showed me how much tallow he was getting from his trims, and now I bag em up every cook. It's honestly changed how I look at the whole process, like you're not just losing meat but also that extra resource you could be using for other stuff.
