Frozen shoulder from a 40 pound rib roast, my prep station was too low
During a holiday rush last December at Sheffield Meats in Portland, I spent 8 hours breaking down a 40 pound rib roast on a prep table that was about 4 inches too low. By the 6th hour my left shoulder was screaming, and I nearly dropped the whole primal on the tile floor. I grabbed a plastic cutting board and stacked two spare racks under it to raise the height, which saved me, but I still had to finish with one arm. Anyone else work through chronic pain because their station is set up wrong, or is it just me being stubborn?
