My uncle showed me his method with just a fridge and a salt box, nothing fancy. That first bite after weeks of waiting, with that deep flavor and that crust, man, nothing from a store comes close. It really is all about the old ways and just letting time do its thing.

Oh man, @nathan_walker, that totally reminds me of something I read last week! There was this article about how back in the day, people used just salt and cold air to make amazing prosciutto. It said all that waiting lets the meat develop those deep flavors you just can't rush! I love how simple methods like your uncle's prove that sometimes less really is more. Stuff from stores always has additives that mess with the real taste.
