Cut a whole beef round with a new Victorinox 10 inch breaking knife last Tuesday... the fat cap just slid right off like butter. Never had a blade feel that smooth before. What other knives give you that kind of clean separation?

My old Wusthof Classic 10-inch cimeter is the only other knife that's come close for me. It's got a bit more flex than the Victorinox, which helps on curved surfaces. That combo of a thin grind and good steel just makes fat separation effortless.
