Why does EVERY business skip the SOP step after onboarding a new hire?

I just onboarded a new warehouse assistant at my packaging company in St. Louis, and by day 3 she was doing everything wrong because nobody wrote down the actual steps. I realized THIS is the same mistake I see at 3 different jobs over 10 years. Managers rush to fill a position but never document the processes first, so every new person learns bad habits from the person before. Is anyone else fighting this battle or is it just my industry?

My old job skipped SOPs all the time... now I get why that was such a mess.
