Vent: That perfect loaf I made last Tuesday has me questioning everything I thought I knew about proofing times.

I left it on the counter for 4 hours instead of my usual 2 and it came out so airy and soft that now I'm wondering if all those recipes that say 'don't overproof' are just fear mongering, has anyone else had better luck ignoring the clock?

Overproofing is a myth, I swear. Four hours changed my whole baking game.

Isn't overproofing just about structure collapsing, @caseyfox, not about timing itself?
