I bought a fancy lined banneton at a kitchen store in Portland because the clerk swore it would end my dough sticking problems. Two bakes later, my wet dough welded itself to the cloth and I lost a whole loaf plus the cost of the basket. Does anyone here just use a plain bowl with a floured towel, or is there a trick to these things I am missing?
