Rant: I read that most home ovens are off by 25 degrees and it explains so much

I was reading an old baking book from the library and it mentioned that home oven thermostats are often inaccurate. The author said to always use a separate oven thermometer to check. I bought one for $8 and my oven runs about 30 degrees cooler than the dial says. No wonder my loaves were always underdone in the middle. Has anyone else checked their oven temp and been surprised?

You really think that's the main issue? I've used some real junk ovens over the years and still got decent results. It's more about knowing your specific oven's hot spots and adjusting. My last place had a rack that burned everything on the left side. I just learned to rotate things halfway through. An extra five or ten minutes usually fixes an underdone middle better than chasing a perfect thermometer reading.

But that's just working around a broken tool. A good oven shouldn't need those constant fixes.
