Pro tip: pick instant yeast over active dry if you want bread before midnight
Last Saturday I stood in my kitchen at 7pm with two packets on the counter, one instant yeast and one active dry, and I had no clue which one would get me a loaf before bed. I went with active dry, proofed it in warm water like the packet said, and my dough barely moved after two hours on the counter. My apartment was sitting at 68 degrees, so I moved the bowl to the top of the fridge and gave it three more hours, and it still came out dense as a brick. Sunday I grabbed the instant yeast, skipped the proofing step, and had a real rise going in about 45 minutes with the same flour and the same recipe. So now I keep a jar of instant in the freezer and only pull out the active dry if I want that slow overnight thing. Anyone else make the switch, or do you still proof yours out of habit?
