Neighbor told me my sourdough was too dense and said to stop punching the air out of the dough after the first rise

I switched to a gentle fold-over method instead of pounding it flat like I always did and now the crumb is way more open, has anyone else dealt with someone telling you your technique is wrong while you thought you had it figured out?

Read a bit recently that folding instead of punching keeps the gas bubbles intact and gives that open crumb. Your neighbor might have been onto something, even if it stung to hear. Glad the switch worked out for you.

Wait so you're saying all that punching I did was just destroying what I was trying to build? Is there a specific point where folding stops working and you actually need to shape it?
