I was kneading bread for 45 minutes before I figured out I was doing it wrong

So I spent like 6 months making these dense, tough loaves and thought that's just how homemade bread was. Last weekend my neighbor who bakes all the time watched me at a party and literally laughed. She said you're basically punching the dough to death, just fold it a few times and stop. I tried her method that night and my bread came out fluffy for the first time ever. Has anyone else been overworking their dough because you thought more kneading = better results?

My neighbor once spent three hours "kneading" her bread and it came out like a hockey puck. She posted about it on Facebook like it was a badge of honor. I mean, yeah, it's bread, not brain surgery. You messed up some flour and water, so what? At least you didn't burn your house down trying to toast it. People act like baking is life or death. It's just food. Relax.
