I finally understood why my bread was dense after talking to my mom's friend

She's been baking for 40 years and watched me knead for like 2 minutes last Saturday. She said "you're not letting the gluten relax" and showed me to rest the dough 10 minutes before shaping. First loaf since then came out way lighter.

Just tell me mom's friend also has a degree in gluten psychology or something. 10 minutes of rest and suddenly I'm a baker.
