Hit 50 loaves this morning and finally saw what I was missing
I've been making bread since January, hit my 50th loaf today with a basic white bread recipe. That number made me realize I'd been underproofing for months because my kitchen is cold and I never adjusted. Did anyone else hit a random number like 50 or 100 before things suddenly clicked?

Wait, you kept a count? That's actually kind of genius. I was the complete opposite - I just baked whenever and never tracked anything. But man, when I finally hit that 50th loaf mark myself, it was like a light switch flipped. I used to think proofing was just a suggestion, like "eh, it'll be fine." Then I realized my kitchen sits at 65 degrees and I was basically rushing every single batch. Once I started letting it go longer and actually paying attention to the dough instead of the clock, everything changed. Your mileage may vary, but for me that number 50 was the moment I stopped guessing and started understanding.

Wait, do you think the thermometer in your kitchen is actually accurate or just lying to you like mine was?
