Half a year of saying sourdough starter is overhyped...
I was totally against the whole sourdough craze, thought it was just trendy nonsense for people with too much time. But my neighbor kept bringing over loaves from her 3-year-old starter named Bertha, and after trying it 4 times I finally admitted it tastes way better than my quick yeast bread. The tang and the chew are just different, and now I've got my own jar of goop on the counter. Did anyone else fight this for months before giving in?

My starter is named Bertha 2 and shes been going for about 4 months now but honestly I still don't get the hype. I mean the bread is fine, it has a nice tang sometimes, but most days it's just way more work for bread that's maybe 10% better than a good quick loaf. I've had more bricks than successes and my neighbor's Bertha bread is good but not life changing.

You know what, I was totally with you on that for like a whole year. I thought sourdough was just this fussy hobby for people who wanted to show off their weird jar of bacteria. Then my sister gave me a slice of her rosemary sourdough and I couldn't even pretend to hate it anymore. That crust had this perfect snap and the inside was actually chewy in a good way, not like my usual bread that dries out in a day. Now I'm the guy texting her for tips on feeding my starter, what changed?
