The customer who asked why I even bother with real thread

Had a lady yesterday watch me sew a text block and go, 'why not just hot glue like those on Etsy?' and I laughed, but then I got home and honestly couldn't answer why I'm so picky about linen thread vs what's faster. Is durability actually worth the extra 20 minutes per book, or am I just being stubborn about tradition, anyone else hit this wall with a client's comment?
