My $40 smoker temp probe lied to me for 6 months

I bought this cheapo dual probe from a hardware store for about $40 thinking I was being smart. Turned out it was reading 30 degrees low on the grate level, so I was cooking everything way too hot. Brisket after brisket came out dry and I blamed my technique. Swapped it for a Thermoworks unit after a buddy at a comp told me to check it in boiling water. Anybody else get burned by a cheap thermometer that threw off their whole cook?

Man that "blamed my technique" part really hit home. I did the exact same thing with a cheap probe from Amazon, tried every trick in the book to fix my cooks. It drove me nuts for months until my wife bought me aThermapen for Christmas. Now I check everything in ice water and boiling water before I trust it. Those cheap ones are just gambling with your meat.

Spending more on a tool saves you time blaming yourself later.
