My cilantro went to seed for 3 weeks before I noticed

I thought my balcony herbs were just getting tall and bushy, turns out they were bolting this whole time! It took 3 weeks of me watering and admiring my 'healthy' cilantro before a friend pointed out the tiny white flowers. I was so focused on the basil and mint that I completely missed the obvious signs. Now I know to pinch off flower buds right away, or just let it go and harvest the seeds for coriander. Has anyone else had a plant trick them like that for way too long?
