Vent: That $50 silicone bread proofing basket was a total waste

I kept seeing those banneton baskets all over baking groups and finally bought one. After three loaves the dough still sticks to the cloth liner no matter how much flour I use. Meanwhile my friend uses a regular mixing bowl with a tea towel and gets perfect results. Should I just ditch the fancy basket or am I using it wrong?

Have you tried seasoning the basket first like you would a cast iron pan? A buddy of mine bought one of those banneton baskets and had the exact same problem - his dough stuck like glue no matter what he did. He ended up spraying it with water and dusting it with rice flour, then letting it sit overnight before using it again. After that he said the liner got this nice coating and his dough finally released clean. He also told me he was using way too much water in his dough recipe, which made it extra sticky in the first place. Might be worth checking your hydration level too.

Rice flour is the secret honestly. Regular flour just doesn't work the same.
