Old hand mixer versus my new stand mixer, what a difference

I finally broke down and bought a stand mixer last month after 12 years of using my grandma's hand mixer for everything. My first batch of brioche came out so much fluffier, like night and day compared to what I got before. I thought I was just bad at kneading dough, but honestly the hand mixer just couldn't handle it and I burned out three motors trying. Anyone else switch from a hand to stand and notice a huge jump in their bread quality, or is it just me?

Honestly I used to roll my eyes at people who swore by stand mixers. I figured it was just fancy equipment for people who wanted to show off in the kitchen. But yeah, my grandma's old hand mixer could barely get through a pound of dough without overheating and making this sad grinding noise. I finally got a cheap stand mixer last winter and my sourdough went from dense bricks to actually having that open crumb structure. The motor just keeps going at the right speed for 10 minutes straight without me having to babysit it. I get it now.
