My neighbor Barb taught me to chill cookie dough overnight

She stopped me mid-batch last Thanksgiving and made me stick a whole tray of sugar cookies in the fridge until morning. The difference in how they held their shape was night and day. Has anyone else tried the overnight rest and noticed a big change?

My sister swears by overnight chilling too but honestly I've never noticed that big of a difference. If you're in a hurry just pop them in the freezer for 15 minutes instead and they'll hold their shape just as good.
