My buttercream turned into soup on a 90-degree day
I had a cake order for a Saturday and my kitchen was way too warm. Adding a cup of cold cream cheese straight from the fridge saved the whole batch from being a total loss. What's your go-to fix for frosting that won't set up?

That cream cheese trick is a lifesaver for sure. I keep a bag of powdered sugar in the freezer for emergencies like that. A couple tablespoons of the cold sugar can thicken a runny batch without watering down the flavor.

Doubt it's ever that serious to need a freezer bag of sugar like hayes.oliver. Just chill the whole mixing bowl for twenty minutes next time. Warm kitchens happen, but so do refrigerators.
