Learned the hard way that parchment paper has a right side

Last month I baked cookies for a school fundraiser and they stuck to the pan despite using parchment. My mom watched me flip the sheet over and said that's the problem, the shiny side faces down. Anyone else ever mix that up or is it just me?

Wait, the shiny side goes down? I have literally used parchment paper my whole adult life and just grab whichever side is up when I pull it out of the drawer. Never once have I noticed a difference in sticking, burning, or anything else. I think your mom might be messing with you or just repeating some old kitchen myth that got passed down for no reason. Both sides are coated the same way at the factory, so the shine is just a manufacturing thing, not a performance thing. Your cookies probably stuck because of something else, like not enough butter in the dough or the pan being too hot going in.
