Last Sunday was my worst baking day in years
Tried to make a simple batch of chocolate chip cookies and ended up with flat greasy disks because I forgot to chill the dough. Then my banana bread sunk in the middle after I opened the oven to check it 20 minutes early. Has anyone else had a day where nothing comes out right?

I mean, I've definitely had those days where you're just fighting the kitchen every step of the way. The banana bread thing is a classic - that peek 20 minutes early is like a curse. I've learned the hard way that opening the door before 30 minutes is almost always a mistake, even if the recipe says you can check. For the cookies, chilling the dough is one of those steps I used to skip but now I swear by it, even if it's just 30 minutes in the freezer. Honestly, sometimes the best thing to do is just walk away and try again tomorrow, your mileage may vary but that's what works for me.

Nobody mentioned the humidity yet though. @brooke_walker23 is right about chilling but if your kitchen was super humid that day it could mess with both the cookie spread and the banana bread rise too. Something about flour absorbing moisture differently.
