I learned the hard way that you can't just swap corn syrup for honey in a pecan pie recipe.

My attempt at a Thanksgiving pie in my Chicago apartment turned into a sticky, burnt mess that set off the smoke alarm, but I salvaged it by turning the filling into a topping for vanilla ice cream, which honestly might be better than the original pie.

Oh man, that's the best kind of kitchen disaster. I've totally been there with the smoke alarm serenade. Honestly, a lot of those super sweet, sticky fillings work way better as a sauce or a topping. Like, that burnt sugar note you probably got? That's basically a cheat code for a fancy caramel sauce. Next time you could even add a pinch of salt to the mess and just call it a salted honey-pecan topping. Way less stress than a perfect pie crust.

You know, @andrewh95, that totally reminds me of the time I tried making a pecan pie from scratch and the filling just would not set. It was basically soup! I ended up pouring the whole runny mess over vanilla ice cream, and my friends loved it. Sometimes the happy accidents are the best part of cooking. I still can't make a proper pie, but I've got a killer ice cream topping recipe now.
