Hit 500 cookies in one bake day, my biggest number yet
I do a small side thing selling cookies for fundraisers, nothing big. Saturday I had orders for 500 total, all chocolate chip and oatmeal raisin. I've done maybe 200 before, but never 500 in one day. I split it into 5 batches of 100, chilled the dough between batches, and used a 1.5 tablespoon scoop to keep them even. It took 9 hours with two ovens going. The surprise was that my last batch baked better than the first, I think because the dough rested longer. Anyone else hit a bigger number than they planned and found the process changes how the cookies turn out?

Resting the dough REALLY makes a difference, try overnight for even better results.
