Heard a baker at the farmers market say they never check their oven temp
I was buying some bread at the market in Greenville and the baker was telling someone they just trust their oven dial. My last cake fail was totally because my oven runs 25 degrees hot, which I found out with a cheap thermometer. I almost threw out a good recipe thinking it was wrong. How many of you actually test your oven heat?

My oven in my old apartment was off by almost 40 degrees. I burned three batches of cookies before I got a thermometer. That baker is playing a dangerous game with their sourdough. What do you do to check your oven?

My grandma taught me the sugar test years ago. You spread a thin layer of sugar on a baking sheet and heat it to 350. If it melts completely without browning, your oven is running cool. If it caramelizes fast, it's too hot. It's a decent free check before you bake anything important.
