Grandma called me out on my pie crust last week and she was right

She watched me struggle with the dough and said 'you're overworking it like you're mad at the flour.' I laughed it off but then I thought about it. She was right - I was kneading pie crust like bread dough for like 5 minutes straight. Next batch I barely touched it and it came out flaky for the first time. Anybody else get called out by family on a basic baking thing they thought they had down?

Oh man, that's such a classic grandma move. The trick with pie crust is you gotta treat it like it's made of glass - barely handle it and stop as soon as it holds together. Cold butter is your friend too, throw it in the freezer for a bit first.

Three weeks ago I tried this exact method after watching a YouTube video and my crust still cracked in the oven. @clairebaker I think people get way too worked up about pie crust like it's brain surgery. It's flour and butter and water, not a nuclear reactor. If it tears a little just patch it with a wet finger, nobody is going to die. Half the time the filling hides any imperfections anyway. I'd rather eat a slightly wonky homemade pie than stress over some perfect crust that takes three tries to get right.
