Finally got a decent crumb on my sourdough after 8 tries
I was at my aunt's place in Portland last weekend and she showed me how she shapes her loaves. Turns out I was way too gentle with the dough, had to really tighten that surface tension. Anybody else have that moment where one tiny tweak fixes everything?

Tbh that dough needs some aggression, not petting.

lol same with me but it was scoring. I was using a razor blade and barely scratching the surface. Saw a video where this dude just goes for it, like 1/2 inch deep, and suddenly my loaves actually look like bread and not sad rocks.
